With at least 12 years of research devoted to this craft, it's no wonder that he is producing such exotic coffees like this one. Grown in the Huila region of Colombia on the Finca El Mirador farm, this coffee is meticulously selected. Each coffee bean is measured for its sugar and density content. From there, it is narrowed down even further, leaving only the best of the crop. \u003c\/p\u003e\n\u003cp class=\"p1\"\u003eEnter in Elkin's years of research. The beans are then fermented for 140 hours with a perfect blend of spices and fruits. After the fermentation, the beans are then left to dry for 25-30 days before making their way across the globe for roasting and consumption.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eWe have been holding on to this coffee for a while, waiting for the perfect moment to roast and release.
